Cooking guide

Pat dry and season generously. Sear fat-side down until golden, turn and brown other surfaces, then finish in a 180°C (160°C fan-forced) oven to your preferred doneness, checking with a meat thermometer. Rest 10–15 minutes and slice across the grain.
